Dear egotistical cooks

So you work in a kitchen well respected for its local and creative cuisine. You work hard and long hours, you contribute to the menu and you are praised by the heavy hitters in the industry. Good for you, but that has no weight with me. Your experience does not give you the right to chastise or critique my work in the kitchen, nor does it develop a rapport on which I would rely for advice.
