It’s weird, if you think about it, that a beverage containing clam juice can be so popular, but it is. And Kate Romanowsky, a server at The Bitter End, says the reason the Bitter End’s Caesar is the best is because the bartenders use really fresh ingredients. “We use horseradish,” she says, “And we put in a spicy bean instead of celery.” The other secret, she says, is that the drink is shaken and not stirred, so to speak, to give it that clam-juice-drinking-double-oh-seven feeling.
