If you’re wondering what makes these noodles stand out from the bunch, it’s all in the name, really. “A mano" literally means by hand—and that’s the secret to these gold-winning pastas. “We do make it daily by hand, we have a small kitchen and a small restaurant, it’s not mass-produced. It doesn’t lose that quality,” says Ristorante a Mano manager Melanie Kronbauer. “And Maurizio is from Friuli, so there’s that authenticity too.” This is the second consecutive pasta gold for the carb-loader’s paradise, and a Mano also takes home Best Italian Restaurant.
