“I love making salads, I love cold food, I love garde manger,” Renée Lavallée says emphatically when prodded about her award-winning greens, pointing out that the win might have something to do with the fact her sous chefs freaking rule. With her salad selection ever-changing alongside Nova Scotia’s in-season produce selection, Lavallée says she loves bringing a mish-mash of fresh ingredients to her team—like corn, peaches, Ciro’s cheese—and saying, OK now what? “When I think of a salad I don’t think of a green salad, I think of vegetables on a plate with cheese and a surprise underneath.”
