Miss Buote, to call this 'authentic' bhan mii does a real disservice to your readers. I think you have made this mistake before. There is no headcheese, liver pate and the bun is not made from rice-wheat. There is nothing wrong with not being authentic and it's not a virtue if the food is not delicious. Perhaps you would be wise to read Kenji Alt Lopez bhan mi primer.
I don't think the reviewer has ever eaten BBQ from the south. If you're going to quote someone as an expert on Southern BBQ, it might be nice to qualify them, especially if Google only offers up an IMDB entry and nothing food related.
